Bklyn Bfast Burritos: Ursula

New York is a lot of things. Tough, gritty, the center of the universe, yada yada yada. One thing that it’s not though, is a burrito town. More specifically, breakfast burritos - the pride and joy of Los Angeles and communities across the Southwest - are borderline impossible to find, at least good ones. Sure you can go into a chain or an Americanized-Mexican joint and get a mediocre rendition of your bacon, egg, and cheese smothered in a raw flour tortilla and adorned with a flavorless yet chunky salsa, but that’s not what I’m talking about nor would I ever be looking for.

Ursula in Crown Heights is what I’ve been looking for. The chef brings his New Mexican roots to Brooklyn in the form of unbelievable breakfast burritos filled with eggs, cheddar, hashbrowns, Southwestern chilis, and options ranging from bacon so crispy it has a granola-like crunch to a spicy chorizo. Unlike many places in town that just throw their ingredients on what I assume is a raw store-bought Mission tortilla, Ursula’s are bubbly, thin, and have a semi-transparent quality - indicating to me that they’re definitely homemade. The cherry-on-top of this incredible vehicle for ingredients is the fact that they throw their burritos on the plancha to brown them on either side - providing even more texture on the burrito, which lends it to holding together better when eating, too. Unwrapping an Ursula breakfast burrito is a beautiful symphony of crunchy bacon and hashbrowns, followed by soft eggs and powerful cheese-pulls, a kick from the New Mexican peppers, and the stretch of their unreal tortillas all working together in harmony. They’re dense, perfect to walk to with, and one of the best breakfasts in New York.
