Fan of Fan Fan Donuts

You know the feeling when you see something glorious on Instagram, but when you sink your teeth into it, it’s as flavorless and disappointing as a limp piece of cardboard? Yeah, same here, and it's devastating. This is a near constant plague of contemporary donut shops that cater more to Instagram visuals than flavors, which is why I always lean into the old school shops rather than those dousing their dough in eclectic toppings.

Well Fan Fan Doughnuts in Bed Stuy just shocked me more than stepping on a live power line. Yes this shop has some inventive options, but my heart lies with the traditional glazed braid - which flakes apart like shattering glass when you rip it and creates a near juicy texture with the sugar and oil. The traditional chocolate is nothing short of stunning with a rich and thick chocolate frosting - texturally reminiscent of licking the spoon of raw brownie batter - enrobing a slightly crispy donut. Sure don’t fix what’s not broken, but maybe you make it just that much less broken, with attention to ingredients and technique - like Fan Fan.
